Baked Chocolate Hazelnut Mousse Cake


Ingredients

  • Caster sugar                                 1/2 cup
  • Unsalted butter                             125 grams (cut in cubes)
  • Dark chocolate                             500 grams (chopped)
  • Water                                           1/2 cup
  • Eggs                                             6
  • Roasted hazelnuts                         3/4 cup
  • Fresh berries and cream                for serving
Method:
  1. Disolve sugar in water over low heat, bring to boil and immediately remove from heat.
  2. Stir into the sugar syrup, the chocolate and butter until melted and smooth.
  3. whisk eggs into the mixture and pour into a 20 com springform cake pan, base and sides lined with baking paper.
  4. Sprinkle hazelnuts over the cake.
  5. placethe cake pan into a large baking dish, half-filled with water and bake for about an hour at 180 degrees until dry and slightly firm to touch.
  6. Remove and rest in the baking dish for 5 mins before placing on a cooling rack to cool off completely.
  7. Loosen the cake from the sides of the pan before removing and sliding onto a server platter.
  8. Dust with icing sugar and serve very thin slices with fresh cream and berries.

Oat Bars

Ingredients:

  • Oats                                       1 1/4 cup
  • Granulated sugar                     1/2 cup
  • Flour                                       1/2 cup
  • Coconut powder                     1/2 cup
  • Butter                                      125 grams
  • Honey                                     1 Tbsp
  • Baking Powder                        1 tsp 
Method:
  1. Preheat oven at a 180 degrees.
  2. In a large bowl, mix together all the ingredients well with hands. Place the mixture in a square pan, press firmly to make the surface smooth and the contents closer together.
  3. Bake for about 20 minutes or unti the surface turns golden brown.

Orange Cake


Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Ingredients:
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup fresh orange juice
  • zest from 1 or 2 oranges
  • 1 teaspoon vanilla
Preparation:
1.     Preheat your oven to 350° F (180° C). Grease and flour a tube pan. If using fresh oranges, zest and juice them.
2.     With an electric mixer or by hand, beat together the eggs and sugar until thick. Gradually beat in the oil.
3.     Stir in the flour, baking powder and salt, and then the orange juice. Beat until smooth, and then mix in the zest and vanilla.
4.     Pour the batter into your prepared pan, and bake for about 40 minutes, or until the cake tests done.
5.     Allow the cake to cool in the pan for 7 to 10 minutes, then turn out onto a rack to finish cooling.
