Ingredients:
- wholemeal flour 1 cup
- vanilla esscence 1 tsp
- castor sugar 1 cup
- carrots 1 1/4 cup
- eggs 2
- oil 1/2 cup
- ground cinnamon 1 tbsp
Method:
- Beat the eggs together with vanilla esscence.
- Add in the sugar whlist mixing. Add oil and mix well.
- Set aside teh electric beater and fold in the flour, Add teh carrots and mix well.
- Pour into a round greased cake pan and bake for abou 40 minutes or until cooked.
- Cool for 15 minutes before removing from the baking pan.
